Healthy Fruit & Nut Spinach Salad AND Teriyaki Chicken & Rice Bowl
I'm in love! I've discovered two new amazing dishes that I want to share. I made them up and was so surprised how both of them turned out! Amazingly delicious and so healthy. Chris loved the chicken & rice bowl which is always a plus!
Fruit & Nut Spinach Salad recipe
Fresh spinach leaves
Chopped walnuts
Apple chunks
Strawberry slices
Shredded mozzarella optional (I've tried it with and without - both are yummy)
Trader Joe's poppyseed dressing
Teriyaki Chicken & Rice bowl
Teriyaki marinated chicken tenders (cut up)
Long grain brown rice
Fresh green beans
Baby carrots
Boil the fresh green beans and baby carrots for 1-2 minutes, drain and sautee in 1 tsp. olive oil for a few minutes. Season with dillweed, pepper and a pinch of salt. Serve in a bowl - layer rice, chicken and veggies on top!
ENJOY!

BLUEberry Muffins
Brit and I have always loved baking together! We baked and played a few rounds of Zingo - I love Friday afternoons! So we decided to use up the container of FREE blueberries we got this week at Publix by making Homeplace Ranch Blueberry muffins from the July/August 2010 American Lifestyle magazine (compliments of our realtor!). We jazzed them up a bit by adding BLUE food coloring (Brit's idea!) to make them extra bluey and we made a "streusel" mixture to put on top (white sugar, brown sugar and cinnamon). They would've been a little bland without the streusel on top but still super yummy!
Homeplace Ranch Blueberry Muffins
Ingredients:
1 egg
1 cup milk
¼ cup vegetable oil
2 cups all-purpose flour
¼ cup sugar
3 teaspoons baking powder
½ teaspoon sea salt
3 teaspoons ground cinnamon
1 cup blueberries
• Preheat the oven to 350°F. Butter twelve regular (⅓-cup) muffin cups, and set aside.
• Combine the egg, milk, and oil in a medium bowl by hand with a spoon or fork. In a large bowl, combine the flour, sugar, baking powder, salt, and cinnamon with a fork.
• Make a well in the center of the dry ingredients, and pour the wet ingredients into it, add the blueberries, and then mix just until all the ingredients are moistened.
• Spoon the batter equally among the prepared muffin cups. Bake for 15 to 20 minutes, or until a toothpick inserted in the center of a muffin comes out clean.

Homemade Hamburger Helper
Around 4'ish, I still wasn't sure what I was going to make with the thawed hamburger meat I'd set out for dinner. Thankfully, my sweet sister called and just happened to mention a recipe she tried last night and loved. I tweaked it a little and the kids devoured it tonight!
Brooke's version of homemade Hamburger Helper
1 box Annie's Homegrown Shells & Cheddar mac (on sale this week at Kroger for $1)
1/2 can 99% FF Cream of Mushroom soup
1/2 pack Lipton Onion Soup Mix
1 lb lean hamburger
Brown hamburger and drain grease. Mix in cream of mushroom soup and onion soup mix. May need to add 1/4 c. water. Simmer on low for 5 minutes. At the same time, boil the Annie's mac shells for 8-10 minutes then add 1/4 c. milk and cheese packet. Combine mac & cheese with hamburger meat. Or serve separately. Delish!
*Chris isn't a fan of onion flavored dishes so this wasn't his favorite but the kids and I loved it!
**I think the hamburger mixture would also taste great over egg noodles.

Easy Summer Salad
Yum! I just found a healthy recipe for Chilled Tomato and Vegetable Pasta Salad and can't wait to try it! Instead of regular pasta, I'm going to try it with a whole wheat pasta variety to kick up the fiber and whole grain goodness.

Rich Black Bean Brownies

RECIPE: Homemade Maple Syrup
Stephanie over at My Frugal Lifestyle has a GREAT 3-ingredient recipe for making Homemade Maple Syrup. I hate buying conventional syrup because it's loaded with high fructose corn syrup and Maple Syrup can be quite pricey. This recipe calls for 3 cups of sugar but I may try making it with raw sugar instead. Go here to get the recipe. I can't wait to try it!

Dinner Plan Week of May 24th
I always enjoy reading weekly meal plans from other bloggers so I thought I'd give it a shot.
Here's our dinners at a glance:
Tonight we had Twice Baked Potatoes, Ham slices and salad.
Monday dinner: Fettuccine Alfredo with Chicken, vegetable medley and salad
Tuesday dinner: Sicilian Meatloaf, Corn, Salad and Homemade Cheddar Dill Biscuits
(My sister makes the BEST Sicilian Meatloaf EVER!)
*I never have buttermilk on hand so I found this recipe here that I'm going to try.
Wednesday dinner: Picnic at the park before Church (sandwiches or wraps, baby carrots and fruit)
Thursday dinner: Chicken Macaroni and Cheese, green beans and fruit
*I made this last week and added Chicken and tweaked the recipe a little. Delish!
Friday dinner: Grilling out
Saturday dinner: Dinner out somewhere after Church

Healthy Summer Salad
Dustin Maher, America's Trainer to the Mom's, posted a delicious looking salad that takes less than 5 minutes to prepare on his website this week. I can't wait to try it!

6 black olives
1/4 c. Feta cheese
Cucumber
Tomato
Vinegar/olive oil based dressing
A healthy salad for around 250 calories!

Smarter Fettuccine Alfredo with Chicken
YUMMY! I can't wait to try this lighter version of Fettuccine Alfredo. And I love that it consists of only 8 ingredients. Chicken Alfredo is one of Chris' favorites but I never make it because it's so high in fat. Hoping this one is a keeper!

Weight Watchers Taco Soup
This is one of my favorite Weight Watchers recipes and it's so easy to make. 1 cup of soup is only 2 points and it's very filling.
You'll need:
1 lb. lean hamburger meat (I use Laura's beef because it's all natural)
1 packet of Ranch Dressing mix
1 Taco seasoning packet
1 can pinto beans
1 can chile hot beans
1 can corn
2 cans stewed tomatoes 4 cans tomato sauce (we prefer tomato sauce)
Brown meat and drain. (Remember to try this no mess trick here). Mix in taco seasoning and Ranch mix. Add all other ingredients. Simmer for 1 hour.

Red Apple Smiles
I saw this super cute recipe for Apple Smiles in Britain's Highlights magazine. Looking forward to trying these with the kids this weekend.
You'll need:
1 red apple
Cream Cheese
Mini-marshmallows
1. Wash apple, core and cut into thin slices.
2. Spread cream cheese on one side of each apple slice.
3. Add a row of mini-marshmallows to half of the apple slices. Top with the remaining apple slices.

I'm actually making Weight Watchers Chicken Stroganoff in my crockpot for dinner tonight.
Here's the recipe:
WW Chicken Stroganoff
(6 servings; 4 pts per serving)
1 lb frozen chicken breast
1 16 oz. container FF sour cream
1 can FF Cream of Mushroom
1 packet of Onion Soup Mix
Place the chicken breast on the bottom of the crockpot and pour the other ingredients on top. Stir together and cook on low for 7 hours. EASY and DELISH!

Homemade Baby Food Tutorial
For those of you with little ones, here's a great tutorial and easy steps to make your own, healthy baby food. If you're reading this and have any other helpful suggestions, please comment. My sweet sister is due with her first baby (a little lady) at the end of August and I know she's interested in finding healthy ways to make baby food for Miss Finley.
