BLUEberry Muffins
Brit and I have always loved baking together! We baked and played a few rounds of Zingo - I love Friday afternoons! So we decided to use up the container of FREE blueberries we got this week at Publix by making Homeplace Ranch Blueberry muffins from the July/August 2010 American Lifestyle magazine (compliments of our realtor!). We jazzed them up a bit by adding BLUE food coloring (Brit's idea!) to make them extra bluey and we made a "streusel" mixture to put on top (white sugar, brown sugar and cinnamon). They would've been a little bland without the streusel on top but still super yummy!
Homeplace Ranch Blueberry Muffins
Ingredients:
1 egg
1 cup milk
¼ cup vegetable oil
2 cups all-purpose flour
¼ cup sugar
3 teaspoons baking powder
½ teaspoon sea salt
3 teaspoons ground cinnamon
1 cup blueberries
• Preheat the oven to 350°F. Butter twelve regular (⅓-cup) muffin cups, and set aside.
• Combine the egg, milk, and oil in a medium bowl by hand with a spoon or fork. In a large bowl, combine the flour, sugar, baking powder, salt, and cinnamon with a fork.
• Make a well in the center of the dry ingredients, and pour the wet ingredients into it, add the blueberries, and then mix just until all the ingredients are moistened.
• Spoon the batter equally among the prepared muffin cups. Bake for 15 to 20 minutes, or until a toothpick inserted in the center of a muffin comes out clean.
