Baking day



What do you do when you're stuck inside??  BAKE!!!

Chris loves Starbucks blueberry scones and has been craving them lately so I found a similar recipe here and tried them this morning (we're not vegan so I used regular ingredients).  They're delicious!

I also made a batch of Weight Watchers Bran Muffins.

Bran Muffins (2 pts each)
*makes 12 muffins

Nonstick cooking spray
1 1/2 c. 100% Bran cereal
1 1/2 c. skim milk
1/3 c. melted margarine
1 egg (I used eggbeaters)
1 tsp. vanilla
1 1/4 c. flour
12 packets Splenda
1 tsp. baking powder
2 tsp. ground cinnamon
1/2 tsp. salt

Combine cereal and milk in bowl.  Let stand 5 minutes.  Stir in margarine, egg and vanilla.  Add combined flour, Splenda, baking powder, cinnamon and salt, stirring just until mixture is blended.  Spoon batter into greased muffin pan or muffin liners.  Bake in preheated 375 degree oven for 20-25 mins.
